Abstract

On a rooftop in Tokyo, among plants, strongly associated with Japanese cooking, the thought of a rooftop farm in Sweden aroused within me. This bachelor thesis uses The New Nordic Kitchen Manifesto as a framework to define what type of produce a rooftop farm may contain under conditions of West Sweden. The thesis reflects on the fundamental arguments for green roofs and basic construction conditions, methods as wells as the importance of weight, depth and composition of the substrate. The plants mentioned in three cookbooks are listed and an interview with the chef behind one of the books is conducted to establish a catalogue of desired plants. By using rooftop gardening and rooftop farming literature as reference a shorter list of twenty-nine eligible species is established and categorized by suitable substrate depth. The result does not assess or evaluate the suitability for rooftop framing of the entire catalogue. Some or perhaps all of the unmentioned plants might be just as suitable for a rooftop farm. The list should be viewed upon as a basic assortment of produce for The New Nordic Kitchen, suitable for rooftop farming.
